CHERRYSTONE CLAMSAll hard-shell clams are of the same species. They grow to different
sizes and delectably depending on the sea water in which they live. All
our clams are "wild-caught," not farmed. Hard-shell clams are
categorized by the thickness of the body, the "hinge-width," not the
diameter. The "hinge width" is the distance between the convex apex
of the right shell and the convex apex of the left shell.
Cherrystones are our biggest hard-shell clam. A clam is a Cherrystone when it has a 2 3/4" to 3 1/4" inch "hinge width". They are perfect in chowders, casseroles and other recipes. We sell Cherrystones in two-pound satchels, approximately 20 clams each.
