Whether you are a long-time Maine lobster lover like our Customer Service Impresario Debbie Whitestone, or you're taking your first crack at it, here are a few tips to help maximize the enjoyment.
.) Separate the tail from the body by holding the body down and twisting the tail. It will pop right off.
.) Find a scissors or a sharp knife. Cut open the underside of the tail, lengthwise. Let it cool for a minute. Split the tail open, lengthwise. Insert a fork and extract the tail meat in one piece. Remove and discard the black vein that runs the entire length of the tail meat.
.) Eat the tail meat. YES!
.) Separate the claws from the body by holding the body down and twisting the claws at the joint where they connect to the body. They will separate right off easily.
.) Crack each claw and knuckle with a nutcracker. Remove the meat.
.) Eat the claw and knuckle meat. That's good, too.
.) Separate the shell of the body from the underside by pulling them apart. Discard the green substance called the tomalley (unless you use it in a marinade).
.) Open the underside of the body by cracking it apart lengthwise, with the small walking legs on either side. Extract the meat from the leg joints and the legs themselves by biting down on the leg and squeezing the meat out with your teeth. This takes a bit of doing. You might want to open another beer about this time.
.) Tell your dinner companions a story about the first time you ever saw a lobster.
.) Clean up the table top with wet napkins.
