COUNTNECK CLAMSAll hard-shell clams are of the same species. They grow to different sizes and delectably depending on the sea water in which they live. All our clams are "wild-caught," not farmed. Hard-shell clams are categorized by the thickness of the body, the "hinge-width," not the diameter. The " hinge width" is the distance between the convex apex of the right shell and the convex apex of the left shell.
Countneck Clams are our smallest hard-shell clams. A delicate, tangy clam, they are wonderful on the half-shell or in sauces and pasta dishes. A clam is a Countneck when it has a 1" to 2" inch "hinge width." We sell Countnecks in two-pound satchels, approximately 24 to a bag.
