What to expect when Succulent Lobsters™ arrive …
We recommend our live Succulent Lobsters™ be prepared the day they arrive. They should be cool and damp and show some reaction when handled. If they are sluggish and show little or no movement, they had a tiring trip and should be cooked that day.
Under ideal conditions, Succulent Lobsters™ will live up to three days. For the best flavor, we suggest you serve them soon after arrival. If you plan on waiting a day to cook them (no more than that, we recommend), slip the lobsters in your refrigerator. Keep a damp newspaper under and over them. If you plan to eat Succulent Lobsters™ that evening, just leave them in the box in a corner of the kitchen; make sure they stay cold. Don’t let the kids (or curious adults) handle them.
Some additional things to remember …
Typically, before they are cooked, Succulent Lobsters have a natural coloring, dark greenish-black or brown. Cooking will change their color to the bright red most of us think of when we think of lobster. Always pick up lobsters by the body, never by the claws or tail. (Hold on firmly as they may wiggle). Do not remove rubber bands.
If you notice after cooking the roe inside a female body is blackish instead of the customary red that is because the lobster has been undercooked. Put the lobster back into the pot until the roe is red.
About freezing lobsters …
Sometimes, even the best-planned feast of live Succulent Lobsters™ needs to be postponed. One option is to freeze your lobsters.
Preparing lobsters for freezing is simple. With a sharp knife, insert the point of the blade into the base of the neck and with one motion stroke down between the eyes. Wrap the whole lobsters or lobster portions in moisture-vapor-resistant wrapping and freeze. For best results, lobsters should be frozen uncooked. Freeze the lobsters whole, or clean them and freeze only the shell portions that contain the edible meat. Freeze lobsters in the shell, to keep the meat from drying. Lobsters can be cooked and then frozen, but we think the quality will not be as good.
