A bisque is a thick, creamy, highly-seasoned soup of French origin, classically made with puréed crustaceans. A bisque can be made from lobster, crab, shrimp, or crayfish. Also, sometimes creamy soups made from vegetables rather than seafood are called bisques.
The French say the name is derived from "bis cuites," meaning "twice cooked," because the crustaceans in bisques are first sautéed lightly in their shells, then simmered in wine with aromatic ingredients, before being puréed.
