Steamers belong to the soft shell group of clams (though their shell is more thin and brittle than soft.) They have a distinctive oblong shape, a protruding siphon or “handle,” and should not be eaten raw. They also should be thoroughly rinsed before cooking to rid them of potential sand or grit.
Ipswich Steamer Clams are famous for their plumpness and taste. Ours are always shucked from the shell and fresh, not frozen. They are perfectly prepared for steaming or sauteing and dipped in melted butter. Or, of course, ready to be dredged in corn flower mix and fried in vegetable oil. There are approximately 50 whole-body shucked clams in a quart package.
